Southwestern Shrimp and Black Bean Sedani Salad

Shrimp combines with southwestern flavors and spicy ranch dressing to add a kick to black bean sedani.

10 ounces Pasta Lensi Black Bean Sedani

2 cups southwest style corn (frozen or canned)

1 jalapeno, seeds removed and diced

1/2 cup red onion, diced

1 avocado, diced

1/4 cup cilantro, finely chopped

1 pound fully cooked shrimp, shell and tail removed

1 cup jalapeno or avocado ranch dressing


1Cook pasta according to package directions; rinse under cold water. Drain well and set aside.

2Add all ingredients to a large bowl and toss. Refrigerate for 2 hours before serving.

Cook’s Tip: This is a great recipe for leftover grilled corn on the cob.  Simply remove it from the cob using a sharp knife, add 1/4 cup diced red bell pepper, 1/4 cup diced onion, and 1/4 cup black beans.
