Are you a Hummus fanatic? Check out this new take on a Mediterranean favorite with Pasta Lensi Chickpea Casarecce and Tahini.
1 pkg Pasta Lensi Chickpea Casarecce (10 oz)
2 tbsp lemon juice
6 tbsp olive oil
1 tsp salt
1/4 tsp black pepper
1/8 tsp cumin
1/2 tsp sugar
1/3 cup tahini
3/4 cup red pepper (roasted)
4 tsp pine nuts (toasted)
2 tbsp parsley (minced)
1Cook entire box of Pasta Lensi Chickpea Casarecce according to package directions. Drain and rinse with cold water. Set aside.
2Mix lemon juice, olive oil, salt, black pepper, cumin, sugar, and Tahini in a bowl with a whisk.
3Mix pasta with dressing in bowl.
4Garnish with toasted pine nuts, roasted peppers, and parsley.
5Serve and enjoy!

I tried this tonight and Am so glad I did! Loved it, will make again just as recipe instructs.
So glad I tried this recipe! Roasted my own red pepper and toasted the pine nuts which was very flavorful! Will be making this again and again!

This is best served chilled and needed additional texture and flavor for my liking. I added chopped seedless CUCUMBER and minced garlic and served with additional chopped tomatoes ON top. Tasty and very filling when served ON a bed of salad greens or spinach.
