Our Black Bean Migas is a tasty mix of Pasta Lensi Black Bean Sedani, egg and a variety of peppers sprinkled with lightly crushed tortilla chips.
1 pkg Pasta Lensi Black Bean Sedani (10 oz)
1/2 cup poblano pepper
1/3 cup jalapeño pepper
2 cups red bell pepper
1 1/2 cups onion
1 tbsp garlic
1/3 cup olive oil
1 1/2 tsp salt
1 tbsp cumin (ground)
1 tsp oregano leaf (dried)
4 cups tortilla chips
1Cook entire box of Pasta Lensi Black Bean Sedani according to package directions.
2Dice Poblano Pepper, Jalapeno Pepper, Red Bell Pepper, Onion, and Garlic.
3Sautee peppers, onion, and garlic in olive oil over medium-low heat until tender and onions are golden (10-15 minutes).
4Add Cumin, salt and oregano to the sautéed mixture and cook till fragrant (1-2 minutes).
5Spoon pepper and onion mixture out and place in a large mixing bowl.
6Scramble Eggs in reserved oil over low heat and add to the pepper mixture.
7Toss pasta with pepper and egg mixture.
8Lightly crush the tortillas and add to the pasta and egg mixture.
9Garnish how you desire and enjoy!

recipe is fine, but that pasta turned out gummy and I wound up giving it to my goats
