Salmon and fresh vegetables come together to make this a perfect dish for your next BBQ, picnic, or family meal.
10 ounces Pasta Lensi Yellow Lentil Penne Rigate
1/2 cup red pepper, diced
1/2 cup green pepper, diced
1 cup cucumber, sliced and quartered
1 tablespoon fresh dill, finely chopped
10 ounces cooked salmon, flaked into bite-sized pieces
1 cup green goddess dressing
1Cook pasta according to package directions. Drain and rinse cooked pasta in cold water; drain well and place into a large bowl.
2Add vegetables, dill, salmon, and dressing to bowl and mix thoroughly.
3Cover and chill in the refrigerator for at least two hours before serving. Garnish with additional chopped dill, if desired.
Cook’s Tip: Cooked salmon in the pouch or even leftover fish, makes this an easy recipe to assemble in advance of an outdoor party or pot luck. You can also use cucumber dill dressing or a balsamic vinaigrette dressing.
