Sweet and earthy beets pair perfectly with creamy goat cheese and chickpea pasta to become an entrée or side dish.
10 ounces Pasta Lensi Chickpea Casarecce
8 ounces whole beets, peeled, drained, and cut into chunks
1/2 cup red onion, diced
1/3 cup goat cheese, crumbled
1 cup balsamic vinaigrette dressing
1Cook pasta according to package directions. Rinse under cold water and drain well.
2Add pasta, beets, onion, and goat cheese to bowl. Top with vinaigrette dressing; toss gently and serve.
